Özet
Makro bir element olan kükürtün biyolojisi, hücre fizyolojisi ve insan sağlığı açısından giderek artan bir ilgi görmektedir. Kükürt metabolizması hücresel redoks homeostazının korunmasında rol oynar ve hücre içi ve hücre dışı matrisler arasındaki etkileşimleri düzenler. Kükürt, insan sütünde en bol bulunan altıncı makromineral ve toplam vücut ağırlığının yüzdesine göre en bol bulunan üçüncü mineraldir. Son zamanlarda, kükürt ve türevleri insan sağlığı ve bağırsak florası arasındaki etkileşimde kilit oyuncular olarak kabul edilmiştir. İnsanlarda, kükürt metiyonin yapısında tiyometil, proteinlerde sülfidril grupları ve glikozaminoglikanlar, steroidler ve çeşitli ksenobiyotik metabolitlerde ester veya amid bağlı sülfatlar içeren bileşikler şeklinde üç baskın formda bulunur. Böylece, kükürt amino asitlerin, proteinlerin, enzimlerin, vitaminlerin ve diğer biyomoleküllerin temel bir bileşeni haline gelir. The biology of sulfur, a macro element, is garnering increasing interest in terms of cell physiology and human health. Sulfur metabolism plays a role in maintaining cellular redox homeostasis and mediates interactions between intracellular and extracellular matrices. Sulfur is the sixth most abundant macromineral in human breast milk and the third most abundant mineral by percentage of total body weight. Recently, sulfur and its derivatives have been recognized as key players in the interaction between human health and gut flora. In humans, sulfur exists in three predominant forms: thiomethyl in the methionine structure, sulfhydryl groups in proteins, and compounds containing ester or amide-linked sulfates in glycosaminoglycans, steroids, and various xenobiotic metabolites. Thus, sulfur becomes an essential component of amino acids, proteins, enzymes, vitamins, and other biomolecules. Given that the role of elemental sulfur in human nutrition has not been extensively studied, this section aims to highlight the importance of sulfur in humans and discuss the therapeutic applications of sulfur compounds in health practices.
