Karbonhidratlar

Özet

Bu bölüm, karbonhidratların hayvan besleme açısından temel yapı taşlarını, kimyasal özelliklerini ve sınıflandırılmalarını kapsamlı biçimde ele almaktadır. Monosakkarit, disakkarit, oligosakkarit ve polisakkaritlerin yapısal özellikleri açıklanmakta; özellikle nişasta, selüloz, hemiselüloz, pektin ve zamklar gibi önemli karbonhidratların bitkisel yapılardaki fonksiyonlarına odaklanılmaktadır. Karbonhidratların yapısal ve yapısal olmayan olarak ayrılması, bitki hücre duvarı bileşenleri ve depo karbonhidratlarının yemlerdeki dağılımı detaylandırılmaktadır. Bölüm, ayrıca tahıllar, yağlı tohumlar ve baklagillerde bulunan farklı karbonhidrat fraksiyonlarının özelliklerini karşılaştırarak yem hammaddelerinin besleme değerine katkısını ortaya koymaktadır. Ksiloz, laktuloz ve glikozaminoglikanlar gibi özel karbonhidratlara da yer verilerek bu bileşiklerin biyolojik ve teknolojik önemine dikkat çekilmektedir. Bu yönüyle bölüm, karbonhidratların yapısı ve yemlerdeki fonksiyonel çeşitliliğini anlamaya yönelik kapsamlı bir kaynak niteliği taşımaktadır.
