Gıda Kaynaklı Patojenlerde Patojenite
Özet
Gıda kaynaklı hastalıklar, küresel halk sağlığını tehdit eden en önemli sorunlardan biri olmaya devam etmektedir. Bu hastalıkların büyük bir kısmı bakteriyel kaynaklıdır ve üç temel grupta sınıflandırılır: enfeksiyonlar, intoksikasyonlar ve toksienfeksiyonlar. Bakteriyel enfeksiyonlar, patojen mikroorganizmaların kontamine gıdalar aracılığıyla gastrointestinal sisteme ulaşarak burada çoğalması sonucu meydana gelir. Salmonella spp., Campylobacter jejuni ve Listeria monocytogenes bu gruba örnek verilebilecek başlıca ajanlardır. İntoksikasyonlar ise bakterilerin gıda içerisinde sentezlediği toksinlerin vücuda alınmasıyla gelişir; bu durumda canlı bakteri hücresinin bulunması şart değildir. Clostridium botulinum ve Staphylococcus aureus tipik intoksikasyon etkenleridir. Toksienfeksiyonlar ise hem canlı bakterilerin hem de bu bakterilerin oluşturduğu toksinlerin birlikte hastalık oluşturduğu durumlardır. Clostridium perfringens ve Bacillus cereus bu gruba dâhildir. Gıda kaynaklı hastalıklar, özellikle bağışıklık sistemi baskılanmış bireyler, çocuklar ve yaşlılar açısından yüksek risk taşımaktadır. Bu hastalıklarla mücadelede gıda güvenliğinin sağlanması, zoonotik bakteri kontrolü, antimikrobiyal direnç izlenimi ve toplum bilincinin artırılması, veteriner halk sağlığının temel hedefleri arasında yer almaktadır. Ayrıca, iklim değişikliği, küresel ticaret ve hızlı nüfus artışı gibi faktörler de bu patojenlerin yayılımı ve etkisini artıran unsurlar olarak öne çıkmaktadır.
