Özet

Besin üretimi, insanlık için doymaktan ve hayatta kalmaktan çok daha fazlasını ifade eder. Bugün deneyimlediğimiz beslenme sistemi ve besin çeşitliliği bu üretim tarihinin sonucudur. Beslenme antropolojisi bu temelde gelişen bir uzmanlık alanıdır. Bu alan, insan topluluklarının geçmişte ya da günümüzde yiyecek ihtiyacını gidermek için besini evcilleştirme, üretme, saklama, hazırlama, pişirme ve sunma biçimleri gibi sosyokültürel gelişmeleri ve bunların etkilerini ele alır. Dolayısıyla beslenme denildiğinde başlı başına bir kültürden söz edilmektedir. Bu bölümde insan topluluklarının beslenme öyküsü Paleolitik, Neolitik, sanayileşme ve günümüz hattında kısaca aktarılmaktadır. Tüketilen besinlerdeki değişim, avcılık, toplayıcılık, evcilleştirme, tarım, hayvancılık, içecekler, fast food, slow food farklı insan topluluklarından örnekler verilerek genel hatlarıyla açıklanmaktadır. Bolluk, statü, teknoloji, inanç, toplumsal cinsiyet gibi belirleyici değişkenler ve eşitsizlik, kıtlık, açlık, obezite gibi sorunlar yer yer beslenme konusunda öne çıkan bazı çalışmalara da yer vererek tartışılmaktadır.

Food production includes more than merely feeding and survival for humanity. The contemporary nutritional system and food diversity are outcomes of this production history. Anthropology of food is an area that has specialized in this base. This area studies social and cultural developments and their impacts on the processes by which human populations, both historically and contemporaneously, domesticate, produce, store, prepare, cook, and serve food to fulfil their nutritional needs. Therefore, the term nutrition denotes a distinct culture. This section briefly outlines the nutritional past of human communities through the Palaeolithic, Neolithic, industrialisation, and contemporary periods. The shifts in dietary consumption, hunting, foraging, domestication, agriculture, animal husbandry, beverages, fast food, and slow food are generally explained through instances from various human societies. Determinative variables like abundance, status, technology, belief, and gender, together with challenges such as inequality, scarcity, hunger, and obesity, are discussed through prominant studies in the field of nutrition.
