The European Union (EU) has established a comprehensive regulatory framework to prevent and detect foodborne pathogens and chemical contaminants that pose a threat to public health. These regulations form the foundation of food safety policies, adhering to the " farm to fork " principle. The EU has developed various legislations to ensure food safety. For instance, Regulation (EC) No 178/2002, known as the General Food Law, sets out the fundamental principles of food safety, while Regulation (EU) 2017/625 establishes the mechanisms for official controls and inspections. Within this framework, hygiene rules and traceability requirements for food businesses have also been defined. Consequently, the EU food safety standards aim to protect consumer health and minimize foodborne risks.
