Mezbahalarda Standart Sanitasyon Operasyon Prosedürleri

Özet

Etin insan gelişimi ve sağlığı için önemli besinsel özellikleri aynı zamanda eti mikroorganizma gelişimine de uygun hale getirmektedir. Etin mikrobiyal kalitesi öncelikle hayvan sağlığından ve mezbahadaki kesim sürecini kapsayan tüm aşamalardan etkilenmektedir. Sağlıklı hayvanlardan mikrobiyal kalitesi yüksek etler elde etmek için mezbaha hijyeninin sağlanması gerekmektedir. Standart Sanitasyon Operasyon Prosedürleri (SSOP) mezbaha hijyeninin sağlanması amacıyla oluşturulan, temizlik ve dezenfeksiyon işlemlerindeki tüm aşamaları, yapılan işlemlerin kontrolünü ve uygulanması gereken düzeltici eylemleri belirleyen prosedürlerdir. Mezbahalarda SSOP uygulamaları Tehlike Analizi Kritik Kontrol Noktası (Hazard Analysis and Critical Control Point; HACCP) kurallarına uygun şekilde hazırlanmakta ve eğitimli personeller tarafından uygulanarak sorumlu amir tarafından denetlenmektedir. SSOP uygulama aşamaları ve denetim sonuçları yapılan temizlik ve dezenfeksiyon işlemlerinin ve düzeltici eylemlerin sıklığına göre belgelenerek günlük SSOP raporu oluşturulmaktadır.
