Kasaplık Hayvanlarda Kesim Öncesi İşlemler

Özet

Kesim öncesi işlemler, kasaplık hayvanların refahı ve et kalitesinin korunmasında hayati öneme sahiptir. Bu işlemler, hayvanların nakli, ante-mortem muayenesi, kimliklendirilmesi, besi durumu tespiti ve yaş tayinidir. Nakil sırasında hayvanların stresten korunması ve uygun koşullarda taşınması, refahın artmasına ve et kalitesinin yükselmesine neden olur. Kesimhanede yapılan ante-mortem muayeneyle hasta hayvanlar ayrılarak, sağlıklı/hijyenik et üretimi sağlanır. Hayvanların kimliklendirilmesi ve kayıt altına alınması, izlenebilirlik ve yönetim açısından önemlidir. Hayvanlar yaş, cinsiyet ve besi durumlarına göre sınıflandırılır; bu sınıflandırma, etin kalitesi, ekonomik değeri, lezzeti, besin değeri ve pişirme özellikleri hakkında bilgi verir. Bu bölümde yukarıda belirtilen konular ele alınarak detaylı bir şekilde açıklanmıştır.
