Gıda Güvenliği Sistemlerinde Teknoloji Kullanımı
Özet
Gıda sektöründe insan nüfusunun artışına paralel olarak artan talep karşısında gıda üretimi ve güvenliği konusunda yenilikçi gelişmeler yaşanmaktadır. Bu gelişmeler sayesinde gıda güvenliğinin sağlanması ve tüketicilerin bu gıdalara ulaşımı da gün geçtikçe artmaktadır. Güvenli gıdanın üretilmesi ise gıda güvenliği sisteminin doğru kurulmasıyla sağlanmaktadır. Gıda güvenliğinin olmaması veya yetersiz olması durumunda hem üretici hem tüketiciler için sorunlar oluşmaktadır. Bu sorunları en aza indirmek ya da ortadan kaldırmak için gıdanın izlenebilirliği konusu önem kazanmaktadır. Gıdanın izlenebilirliğinin sağlanması amacıyla çeşitli teknolojik tekniklerden faydalanılmaktadır. Ayrıca gıda enfeksiyonuna ya da intoksikasyonuna neden olan mikroorganizmaların veya toksinlerin hızlı tespitine imkân sağlayacak yeni teknikler gıda güvenliğinin sağlanmasında tüketici dostu olacaktır. Özellikle Endüstri 4.0 teknolojileri ile gıdanın, tedarik zincirinin her aşamasında dijital olarak izlenmesini sağlayarak meydana gelen ekonomik kayıpların ve tüketici sağlığına endişeye neden olacak risklerin giderilmesine katkı sunacaktır.
