Özet

Mantar yetiştiriciliği, artan dünya nüfusu, azalan ekilebilir arazi ve iklim değişikliğinin yarattığı baskılar karşısında sürdürülebilir tarım sistemlerinin önemli bir bileşeni olarak öne çıkmaktadır. Yenilebilir mantarlar; yüksek besin değerleri, fonksiyonel bileşenleri ve ekonomik katma değerleri nedeniyle yalnızca gıda üretiminde değil, aynı zamanda sağlık, farmasötik ve çevre yönetimi gibi farklı alanlarda da kullanılmaktadır. Bu bölümde mantarların tarihsel gelişim süreci, morfolojik özellikleri, ekolojik istekleri ve modern yetiştiricilik teknikleri incelenmiştir. Agaricus bisporus ve Pleurotus türleri başta olmak üzere yaygın kültür mantarlarının yetiştiriciliğinde kullanılan substratlar, kompost hazırlama yöntemleri, misel üretimi ve ekolojik koşullar ayrıntılı biçimde tartışılmıştır. Ayrıca fungal, bakteriyel ve viral hastalıklar ile zararlılar, bunların kontrol yöntemleri ve fizyolojik bozukluklara ilişkin bilgiler sunulmuştur. Hasat, muhafaza ve işleme teknikleriyle mantarların ekonomik değer zincirindeki rolü değerlendirilmiş; yenilebilir ambalajlama sistemleri ve katma değerli ürün geliştirme konularına da değinilmiştir. Bu kapsamlı yaklaşım, mantar yetiştiriciliğinin hem küçük ölçekli üreticiler hem de endüstriyel işletmeler için sürdürülebilir, ekonomik ve çevresel açıdan avantajlı bir üretim alanı olduğunu göstermektedir.
