Özet
İlkay Yılmaz tarafından kaleme alınan bu çalışma, Kuzey Amerika Kıtasındaki sokak lezzetlerinin tarihsel gelişimini, sosyo-kültürel yapısını, gastronomi turizmine olan etkilerini, diğer mutfak kültürleriyle benzerlik ve farklılıklarını ve öne çıkan bölgesel reçetelerini kapsamlı bir şekilde incelemektedir. FAO ve WHO tanımlarına dayanarak sokak yemekleri, cadde ve kamuya açık alanlarda satılan, ek işlem gerektirmeden hemen tüketime hazır gıdalardır. Kuzey Amerika’da sokak yemeği kültürü; Kızılderili, Latin Amerika, Asya, Afrika ve Avrupa göçmen mirasıyla harmanlanarak zengin bir füzyon mutfağı oluşturmuştur. Hızlı kent yaşamı ve ekonomik nedenlerle sokak gıdaları gündelik hayatın ayrılmaz bir parçasına dönüşmüştür. Gastronomi turizmi bağlamında sokak yemekleri, turistlerin yerel kültürü özgün biçimde deneyimlemesini sağlayan sürdürülebilir ve ekonomik bir çekim merkezidir. Göçmenler için temel bir geçim kaynağı olan bu sektör, yemek kamyonları ve seyyar tezgahlar aracılığıyla gelişmiştir. Çalışmada Frito Chili Pie, Chicago usulü Hot Dog, Meksika Tacoları, Hawaii Poke Bowl, Texas Barbekü, Burrito, Fajita, Halifax Donair ve Amerikan Donutları gibi ikonik yemeklerin tarihsel kökenleri ve reçeteleri sunulmaktadır. Sonuç olarak sokak lezzetleri; yerel mutfak mirasının korunmasına, kentsel ekonominin güçlenmesine ve turizm çeşitliliğinin artmasına stratejik katkılar sağlamaktadır.
This study written by İlkay Yılmaz comprehensively examines the historical development, socio-cultural structure, impacts on gastronomy tourism, similarities and differences with other culinary cultures, and prominent regional recipes of street foods in the North American continent. Based on FAO and WHO definitions, street foods are ready-to-eat foods sold on streets or in public spaces without requiring additional preparation. Street food culture in North America has formed a rich fusion cuisine by blending Native American, Latin American, Asian, African, and European immigrant heritage. Due to fast urban life and economic reasons, street foods have transformed into an integral part of daily life. In the context of gastronomy tourism, street foods serve as a sustainable and economical attraction that enables tourists to experience local culture authentically. Providing a vital source of livelihood for immigrants, this sector has flourished through food trucks and mobile carts. The study presents the historical origins and recipes of iconic dishes such as Frito Chili Pie, Chicago-style Hot Dog, Mexican Tacos, Hawaiian Poke Bowl, Texas BBQ, Burrito, Fajita, Halifax Donair, and American Donuts. Consequently, street foods make strategic contributions to preserving local culinary heritage, strengthening the urban economy, and enhancing tourism diversity.
