Özet

Bu çalışma, Asya sokak lezzetlerinin tarihsel gelişimini, sosyo-kültürel boyutlarını, gastronomi turizmine etkilerini ve bölgeye özgü öne çıkan yemek reçetelerini kapsamlı bir şekilde incelemektedir. Dünya genelinde milyarlarca insanın günlük beslenme ihtiyacını karşılayan sokak yemekleri, özellikle Asya kıtasında pratikliği, erişilebilirliği, düşük maliyeti, çeşitliliği ve zengin kültürel ögeleriyle kent yaşamının ayrılmaz bir parçası durumundadır. Çin, Japonya, Güney Kore, Tayland, Vietnam, Malezya ve Kamboçya gibi ülkelerde benzersiz pişirme teknikleri, taze deniz ürünleri, sebzeler ve özel baharatlarla sunulan bu lezzetler, destinasyonların kentsel kimliği ile marka imajının biçimlenmesinde stratejik rol oynamaktadır. Çalışmada, sokak yemeklerinin yalnızca ekonomik bir beslenme seçeneği olmayıp, sosyal sınıf ayrımı olmaksızın insanları birleştiren ortak bir kültür unsuru olduğu belirtilmektedir. Michelin yıldızlı seyyar tezgahlardan kültürlerarası mutfak alışkanlıklarına kadar geniş bir çerçevenin ele alındığı metinde; Buğulanmış Bao Çörekler, Tom Yum Çorbası, Karides Laksa, Pho, Amok Trey, Tteokbokki ve Jalebi gibi sembolik yemeklerin reçeteleri ayrıntılarıyla sunulmuştur. Ayrıca, gelişmekte olan ülkelerde seyyar gıda satıcılığının düşük sermaye ve vergi avantajlarıyla önemli bir istihdam kapısı oluşturduğu ve yerel aileler için geçim kaynağı sağladığı açıklanmaktadır. Sonuç olarak, gastronomi turizmine büyük ivme kazandıran sokak lezzetlerinin tanıtımının yanı sıra hijyen ve gıda güvenliği standartlarının da sıkı denetimlerle sağlanması gerektiği ifade edilmektedir.

This study comprehensively examines the historical development, socio-cultural dimensions, effects on culinary tourism, and prominent region-specific recipes of Asian street foods. Meeting the daily nutritional needs of billions of people worldwide, street foods have become an indispensable part of urban life, particularly in Asia, owing to their practicality, accessibility, low cost, variety, and rich cultural elements. Presented with unique cooking techniques, fresh seafood, vegetables, and special spices in countries such as China, Japan, South Korea, Thailand, Vietnam, Malaysia, and Cambodia, these flavors play a strategic role in shaping the urban identity and brand image of destinations. The study highlights that street foods are not merely an economical dining option but also a unifying cultural element connecting people regardless of social class. Addressing a broad scope from Michelin-starred hawker stalls to intercultural culinary habits, the text presents detailed recipes for iconic dishes including Steamed Bao Buns, Tom Yum Soup, Prawn Laksa, Pho, Amok Trey, Tteokbokki, and Jalebi. Furthermore, it explains that street food vending in developing countries creates significant employment opportunities with low capital requirements and tax advantages, providing a vital livelihood for local families. Consequently, it is emphasized that alongside promoting street foods—which significantly boost culinary tourism—hygiene and food safety standards must also be strictly ensured through regular inspections.
