Özet

Bu çalışmada, Avrupa sokak lezzetlerinin tarihsel gelişimi, sosyo-kültürel durumu, gastronomi turizmine katkıları ve öne çıkan simgeleşmiş reçeteleri kapsamlı bir şekilde incelenmektedir. Geçmişi Pompei kazı bulgularından Antik Yunan’daki balık kızartmalarına kadar uzanan sokak yemeği kültürü, Sanayi Devrimi sonrasında artan kentleşme ve kısıtlı zaman nedeniyle dar gelirli işçi sınıfının temel beslenme ihtiyacını karşılamıştır. Günümüzde ise toplumun tüm kesimlerine hitap eden küresel bir ticari ve kültürel olguya dönüşen sokak yemekleri, geleneksel hızlı yemeklere göre daha sağlıklı bir alternatif sunmaktadır. Dünya genelinde her gün yaklaşık 2,6 milyar insanın tükettiği sokak lezzetleri, turistlerin harcamalarının %30'unu kapsayan gastronomi turizminden büyük bir pay almaktadır. Tarihsel süreçte yaşanan savaşlar, göçler ve ticaret vasıtasıyla farklı kültürlerle etkileşime giren Avrupa sokak mutfağında genel olarak et ve hamur işi ürünler ağırlık kazanmıştır. Bu doğrultuda metinde; İtalya'dan Arancini, Belçika'dan Waffle, Almanya'dan Currywurst, İspanya'dan Churros, İngiltere'den Fish and Chips, Avusturya'dan Dana Şnitzel, Fransa'dan Krep, Balkanlar'dan Burek ile Macaristan'dan Kürtos Kalacs ve Langos gibi 10 popüler lezzetin malzeme listeleri, hazırlanışları ve tarihsel arka planları ayrıntılı bir biçimde aktarılmaktadır.

In this study, the historical development, socio-cultural status, contributions to gastronomy tourism, and prominent iconic recipes of European street foods are comprehensively examined. The street food culture, whose history traces back to excavation findings in Pompeii and fried fish in Ancient Greece, met the basic nutritional needs of the low-income working class following the Industrial Revolution due to increasing urbanization and limited time. Today, street foods, which have transformed into a global commercial and cultural phenomenon appealing to all segments of society, offer a healthier alternative compared to traditional fast food. Street foods, consumed by approximately 2.6 billion people worldwide every day, claim a significant share of gastronomy tourism, which accounts for 30% of tourist expenditures. In European street cuisine, which interacted with different cultures through wars, migrations, and trade throughout history, meat and pastry products generally predominate. Accordingly, the text presents in detail the ingredient lists, preparation steps, and historical backgrounds of 10 popular street foods, including Arancini from Italy, Waffles from Belgium, Currywurst from Germany, Churros from Spain, Fish and Chips from the UK, Veal Schnitzel from Austria, Crepes from France, Burek from the Balkans, as well as Kürtos Kalacs and Langos from Hungary.
