Bu kitap, Gıda Teknolojisi alanında reaksiyon kinetiği konusunu ele almaktadır. Kitap, Gıda Mühendisliği bölümlerinde okutulan Reaksiyon Kinetiği dersine yönelik bir Türkçe kaynak olarak hazırlanmıştır.
